Easy as Pizza Pie!

When you’ve had a busy day, it’s later than usual for preparing dinner, and you’re just plain tired, this recipe provides an easy and inexpensive meal that everyone in your family will love. Never feel guilty about a quick and easy approach when you’re just not able to provide more. Simple can still satisfy the need!

Mini Pizzas
Serves 6-8

Ingredients:

20 small no-carb tortillas
8 oz cream cheese
16 oz shredded mozzarella
1 lb browned crumbled mild sausage
14 oz jar pizza sauce
6 oz jar of sliced mushrooms (if desired)
Turkey pepperoni slices

Directions:

Brown and drain the sausage. Place 10 tortillas on two cookie sheets and spread each with cream cheese, then layer each with sausage and shredded mozzarella. Cover each with another tortilla and spread with pizza sauce, more shredded mozzarella, and then the mushrooms and pepperoni. Bake at 400° for 20 minutes.

Serve, if desired, with a small garden salad.
